This ginataang gulay na may tuyo ( vegetables cooked in coconut milk with dried fish) is a vegetable dish that is very yummy and popular in the Philippines, although there are lots of variations in this dish depending upon each region, but the taste is still the same DELICIOUS! :-) The coconut milk makes the soup creamy and savory, perfect to partner with fried fish.
Ingredients:1/2 kilo squash
1 big eggplant
10 pieces okra
2 cups pure coconut milk
3 cups water
1 big dried fish ( fried)
Procedure:1. Put the water in a pot and bring to boil, then put the squash and the fried dried fish then simmer for 3 minutes.
2. Add the sayote and eggplant and simmer for 3 minutes.
3. Add the okra and simmer for 2 minutes add the coconut milk and simmer.
4. Add salt if necessary and serve it hot.
