Ukoy is a delicious Filipino dish that is serve as a snack, appetizer and even as a viand. Easy to make and budget friendly this recipe usually uses sweet potato, but I used squash, since squash is abundant and cheaper in my place. Here is my way of cooking it.
Ingredients:400 grams squash
1 cup flour
1 onion ( finely chopped)
salt and pepper to taste
Procedure:1. Shred or grate the squash then in a mixing bowl , mix all the ingredients
If the mixture is too dry just add 1 egg
2. Spoon the mixture and fry it with shrimp on top.
