Ingredients:1/2 kilo fish ( any fish of your choice)
1 medium size tomato
1 small size onion
3 passion fruit ( extract the juice)
1 pc eggplant
1 bunch spinach or kangkong
6 cups of water or rice washing (pinaghugasan ng bigas)
some siling haba (chili)
salt to taste
Procedure:1.In a pot put the water, chili, tomato, onion , salt and pepper, then bring to a boil.
2. Once boiling add the fish and simmer until half cooked then add the eggplant, simmer for few minutes.
3. Add the kangkong or spinach then simmer until cooked, add the passion fruit extract, then simmer for a minute and turn off the heat.
4. Serve it hot and enjoy.
